Inmiddels zijn de restaurants een weekje open en wordt het duidelijk hoe de teams functioneren. Zo goed als overal zijn er personeelsproblemen. Dat leidt hier en daar zelfs tot ontslag. En de koppels kunnen gerommel in hun team nochtans missen als kiespijn, want allemaal wachten ze met een bang hart op de komst van 3-sterren-chef Sergio Herman. Hij is door de jury op pad gestuurd om alle restaurants te recenseren. Daarna zal hij twee restaurants nomineren.
