In Malaysia recently Poh was reminded of the depth and complexity of Nonya culture, and this inspired her to master an old classic, Nonya Chicken Curry. The dish has always been a firm favourite in Poh’s family, but Poh was slightly intimidated by all the spices in the recipe. When she cooked it and it was just like the dish she loved through her childhood, Poh jumped for joy: it was like conjuring magic.
